Full Job Description

  • Uphold food, portion control, and allergen control standards.

  • Ensure that all procedures are correctly carried out.

  • Provide guidance and support to junior staff members.

  • Support in key organisational tasks, leading in some circumstances.

  • Actively input into menu design and dish creation.

  • Deliver administrative support to the Executive Chef on allergens, menu spec and recipe production.

  • Order and maintain correct stock levels.

  • Support in conducting and ensuring accurate and timely reporting of stocktakes.

  • Attend management meetings in absence of Senior Chef Team.

  • Deliver reports accurately and on time.

  • Maintain up-to-date records - these may include staff training records as well as cleaning and temperature charts.

  • Control supplies and equipment and re-order when necessary.

  • Have a strong understanding and hands on approach to Marketman, Procurement and Costing software. (Ongoing training will be provided)

  • Support Catering Operations Manager in Training and guidance of Front of House Team where required.

    Has a minimum of 1 years Sous Chef experience or equivalent.

  • Has had involvement in recruiting, training team members and planning rotas.

  • Strong organisational and planning skills, with the ability to plan ahead.

  • Accurate and efficient administration skills.

  • Excellent communication, both verbally and in writing.

  • Up-to-date knowledge and understanding of Health & Safety and Food Standards Legislation.

  • A quick thinker, with the ability to problem solve and multitask without compromising quality of service.

  • Keeps calm under pressure, always demonstrates tact and diplomacy towards others.

  • Demonstrates a personal commitment to EDI.

  • Has personal credibility, leads by example and able to represent the organisation with professionalism and integrity., Sous Chef: 1 year (required)
